Classic Chicken Salad


Ingredients:
  • 6 cooked Pilgrim's Pride chicken breast halves, boneless, skinless
  • 1 stalk of celery
  • 1 carrot
  • 1/2 onion
  • 1 bay leaf
  • 3/4 cup mayonnaise
  • 1.5 oz milk or cream

Directions:
Season chicken breast with salt and white pepper. Place chicken breasts in a deep pan. Add one bay leaf. Cut in quarters 1 carrot, 1 stalk celery, 1/2 onion and add to chicken. Add one to two inches water careful not to wash seasonings off chicken breast. Bring to boil. Turn heat down and simmer approximately 45 minutes.

Make sure not to boil chicken or it will become tough. Let chicken cool.

Tear chicken into bite size pieces. Mix with mayonnaise mixture and diced celery. Additional favorite ingredients may be added to this basic chicken salad recipe. Chicken may be cooked ahead of time and mixed together the next day for a quick meal.
