Cranberry Chicken Calzone

Ingredients:
  • 3 cups cooked chopped chicken
  • 2 tablespoons olive oil
  • 1 large onion, sliced thin
  • 1 cup plus 1 tablespoon dried cranberries, divided
  • 2 tablespoons brown sugar
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 4 tablespoons apple butter
  • 4 tablespoons plus 1/2 teaspoon crumbled Gorgonzola cheese, divided
  • 1 loaf frozen bread dough, thawed
  • 1 egg, lightly beaten
  • 2 tablespoons sesame seeds

Directions:
In large frypan, place olive oil over medium heat. Add onion, 1 cup of the cranberries, brown sugar and vinegar. Cook, stirring, until onion is soft. Stir in mustard and apple butter; simmer 2 more minutes. Fold in 4 tablespoons of the Gorgonzola cheese. Roll out thawed bread dough to form 12x16 rectangle. Arrange chicken evenly over half the bread; spread onion mixture over chicken. Fold dough over the filling and press dough with fingers to seal ends. Cut several diagonal slashes in top to vent. Brush with egg and sprinkle with sesame seeds. Remove dough to lightly greased or parchment-lined cookie sheet. Place in 350 degree F. oven and bake for about 40 minutes or until golden brown. Remove from oven and let stand 10 minutes. Slice and arrange on serving dish. Garnish with remaining cranberries, remaining Gorgonzola and parsley sprigs.
