Spicy Summer Chicken Salad

Ingredients:
- 3 cups cubed chicken, white and dark meat
- 2 limes, zest and juice
- 2 tablespoons sesame oil
- 2 tablespoons peanut oil
- 1 teaspoon red pepper flakes
- 1 cup coarsely chopped chilled nectarines
- 1 cup chilled navel orange sections, skin removed
- 3 small green onions, thinly sliced
- 2 teaspoons minced fresh thyme
- 3 tablespoons finely chopped fresh ginger root
- 2 tablespoons honey
- 3 tablespoons fresh lime juice
- 8 large red cabbage leaves
- 1 cup grapefruit sections, skin removed
Directions:
In large bowl, mix together chicken, zest and juice of 2 limes and sesame oil. Cover and refrigerate 15 minutes; drain. In large wok or frypan over medium high heat, place peanut oil. Add red pepper flakes, stirring. Add chicken in 2 batches and continue to stir fry about 4 minutes, or until no longer pink. On baking sheet lined with paper towels, drain chicken. Cover loosely with plastic wrap and place in refrigerator to chill. In large bowl, mix together nectarines, oranges and grapefruit; drain. Add green onions, lemon thyme and ginger root, stirring gently. In small bowl, whisk together honey and lime juice; pour over fruit. Add chilled chicken and mix gently. Arrange 2 cabbage leaves on each of 4 plates and evenly divide chicken-fruit mixture on top. Garnish each salad with 3 cashews and a lemon thyme sprig. Makes 4 servings. |
